continuing the ride on the granola train.. this is one of my favorites of the flavored variety because i’m not hugely into throwing a bunch of pie spices into my oats. add a chopped up banana to this and you’re in tropical breakfast heaven.
i created this recipe years ago when i was in college and fell in love with kashi’s coco beach cereal. this version is just as delicious but cheaper and probably healthier. because i don’t document my recipes well (until now with this blog!) i didn’t add quite enough cocoa powder but i changed the amount listed in this recipe so you won’t have the same problem.
chocolate coconut granola
makes 4 cups
2 1/2 cups oats (not the quick kind)
1 cup chopped almonds
1 cup raw shredded coconut (i use the bulk kind not covered in sugar)
1/2 cup cocoa powder
1/4 cup brown sugar
1/4 olive oil
1/4 cup honey
2 generous pinches coarse salt
preheat the oven to 300.
mix together the oats, almonds, coconut, and cocoa powder. add the brown sugar and mix again.
add the olive oil and honey to the mix and mix well. you might need to use your hands for this. (hint: use a measuring cup to measure the oil first and after pouring into the granola mix your cup will be coated just enough for the honey not to stick to it while you measure it!)
spread the mixture out on a lightly oiled sheet pan and bake for 15 minutes. stir and bake another 15 minutes. stir again and turn oven to 275. bake another 15 minutes before you pull the granola out of the oven and place the tray on a cooling rack.
