missonary’s downfall: boozy pineapple mint slushie

i was served this a few weeks ago at the most wonderfully hosted tiki party. every time your glass was almost empty the bartender/host would emerge from the kitchen with a new concoction in hand for you to try. this was by far the hit of the party, unless you count the fries that came out of their deep frier as we were all ready to journey home.

this drink has just a hint of pineapple and is very minty. i think a little coconut cream would do wonders for this cocktail and i plan on trying it next time i make this.

because it isn’t a super icy slushie, it is meant to be drank in small cups (misleading photo here) so all your ice doesn’t melt when you’re only halfway done.

missionary’s downfall
makes 1 pint glass

1 shot run
1/2 shot peach flavored brandy
juice from 1/2 a lime
2 sprigs mint
1 pineapple ring, frozen, if you have the foresight

fill a pint glass most of the way with ice (a little over 3/4 of the way). add the rum, brandy (we used 1 1/2 shots, the drinks were noticeably boozy but we like it like that). top with mint and a preferably frozen pineapple slice and throw in the blender. blend until smooth.

*note: most of the recipes i looked up for reference included an ounce or so of honey syrup or simple syrup. we thought it was just fine without any added sweetener, but if you like your drinks on the sweeter side i would suggest making ice cubes with the extra pineapple juice and using one or two of those instead.
