pita flatbread

a few weeks ago i was making falafel gyros for dinner and all of the stores near my house were out of pita bread. i figured it would be easy to make them at home so i went over to smitten kitchen and found this recipe for pita bread. as i was waiting for the yeast to dissolve in the water i read ahead a bit and see the point where she tells you to let the dough rise overnight! oh no. in goes the sugar to feed that growth.

i give you the lazy person’s adaptation of deb’s pita bread that doesn’t puff up, but is still quite delicious.

pita bread
2 1/4 teaspoons yeast (1 packet)
2 teaspoons sugar
1 1/4 cups lukewarm water
mix together to dissolve yeast and sugar and let stand 5 to 10 minutes

2 teaspoons olive oil

3 1/4 cups flour
mix with stand mixer paddle until integrated and change to dough hook to fully mix
or mix well with spoon

1/4 cup flour
mix with dough hook until integrated (some scraping will be necessary because the dough is very sticky)
or knead it in on a floured surface
repeat with 1/4 cup flour
repeat with 1/8 cup flour

knead for 5 more minutes

cover with saran wrap and let rise for 1 hour or until doubled in size

punch down and cut into 8 pieces

shape into balls, cover with saran wrap, and let rise for 30 minutes

roll into circles and set on baking sheet

cook in pan on medium heat for 1 minute on each side
